A 4,000-acre working bison ranch near Elmdale, in the heart of the Flint Hills, with a pavilion completed in 2017 for up to 325 guests and overnight space for 31, with breakfast both mornings. 2. The Press

A 1946 building that once printed the AG Press newspaper, minutes from downtown Manhattan and K-State, with exposed brick, high ceilings and room for 250. Day rates start at $4,000 and weekend packages at $6,000, with tables and chairs included and setup and bartending as add-ons.

3. Blue Sage Barn at Prairiewood

A renovated equestrian barn in the native prairie outside Manhattan, seating 125 (175 at most), with a wraparound covered veranda, a fire pit and an adjoining meadow, next to the Prairiewood RetreatHouse. Pricing by phone.

4. Mill Creek Lodge at Volland Point
